many chefs can claim that they have been at the right place
at the right time, giving them the unique opportunity of
cooking for the likes of President Obama and His Holiness
Dalia Lama, albeit for a few days. Mexican Damian Trejo
Manhattan Grill, at the West India Quay waterfront is
one such Chef.
This Mexico City native is a meat
lover. He trained at Mexico’s famous “Colegio
Superior de Gastronomia” before embarking
on a culinary career in Tabasco State, the headquarters
of the Mexico’s oil industry.
he stands tall at Manhattan Grill; a London Grill
restaurant that sits comfortably on the waterfront
of Canary Wharf’s West India Quay under the
Marriott Hotel. The view from the very spacious and
beautifully designed Restaurant at night is enchanting.
Grill takes pride in its meat because it is sourced
from the Marriot brand. This enables the restaurant
to serve a choice of steaks carved out of wet-aged
USDA prime Black Angus from Creekstone farms in Kansas
and Scottish Aberdeen Angus from Inverurie –
the birth place of the legendary Aberdeen Angus Steak
alongside some mouthwatering seafood such as a specially
crafted Roasted Black Cod and King Prawn starters
among others. The restaurant is very proud to have
a Chef like Damian Trejo who is trained to love meat
alongside excellent wine compiled for the restaurant
by the Baron Rothschild Estate.
enthusiast, Damian Trejo spent the last 7 years in Poland
and most recently while working at the Marriott Warsaw,
he collaborated with President Obama’s culinary team
to co-ordinate the President’s meals during the latter’s
3-day stay in Warsaw.
the early stages of his career, he learned to sear USDA
prime beef to perfection on a 3 meter long charcoal grill
in scourging summer heat at a steakhouse in Mexico’s
Tabasco State making him an ardent meat lover. He carried
the passion for cooking meat on to Lake Tahoe in California,
USA, a destination, which has since become his favourite
talking to Chef Trejo, it is fair to say that he adores
meat and the simplicity that surrounds it. He admits to
personally enjoying the art of butchering and personally
carves the meat that is delivered to Manhattan Grill to
ensure that he cuts out the choicest parts to perfection.
London Olympics drew Chef Trejo to Manhattan Grill and since
his arrival, the restaurant has been making headlines with
steak grills as well as some carefully selected seafood.
